Herb Omelette with Cucumber Mint salad









Ingredients: 

omelette: eggs, chopped  herbs(chives, oregano, thyme, parsley, rosemary), salt, pepper, a tbsp. of fresh milk  then whisk to combine or use  immersion/hand blender so no  need to chop the herbs.  Place the butter or oil in an omelette pan and wait until the pan gets quite hot  then add the egg mixture... continue cooking until the omelette is set.

salad: cucumber, mint leaves , tomatoes , salt , pepper, olive oil, lemon or red wine  vinegar

serve with some good  bread

Sticky Rice with Golden Kiwifruit




Ingredients: glutinous rice soaked for  3 hours, steamed, mixed with coconut milk. Serve with  sliced  golden kiwifruit or mango.

Bruschetta - Ground beef with tomato cheese and avocado



Ingredients:  sourdough bread cut into even slices,  avocado, tomato, emmental/cheddar cheese, ground beef, ketchup, espellete(ground mild pepper) dash of olive oil, salt and pepper

Normandy Tart/Tarte Normande





Ingredients:

250 g. T55 flour
150 g; unsalted butter
1 egg
40 g.  sugar( I prefer brown/muscovado sugar)
1 sachet  vanilla/sugar powder or 1-2 drops of vanilla extract

3 medium apples
juice of 1 lemon
2 eggs
1 eggyolk
50 g. sugar
200 ml. fresh cream or 100 ml thick fresh cream(crème fraiche  épaisse) and 100 ml liquid fresh cream(creme fleurette/fluide)
icing sugar for  dusting
optional : calvados or kirch









Portobello Mushroom Burger








Ingredients:
  burger buns(preferably organic), portobello mushrooms, onions(red), cheese(mimolette/cheddar) and  marinade: balsamic vinegar/organic  coconut aminos seasoning sauce, oregano powder, garlic powder, thyme, rosemary, salt and pepper.  you can add: sprouts of your choice (broccoli sprouts radish sprouts, mungo sprouts.. etc.), capsicum/red peppers.

Jolie Fleurs de Printemps 2020 sur la Terrace



Endives au Jambon light sans bechamel /Endives(braised or steamed) with ham without bechamel light version




Ingredients:

      Endives(Chicory), fresh cream/créme liquide, jambom cuit sans nitrite or jambon blanc(ham nitrate-free), gruyere cheese or parmesan cheese, salt pepper
 ... steam endives  then wrap around with ham/jambon , arrange them  in a baking tray, pour the créme liquid/fresh cream, gruyere or parmesan,  cheese sprinkle salt and pepper  then place in the oven for 15 minutes 220 degree celsius.  Serve with " purée de pois cassés"
