Herb Omelette with Cucumber Mint salad









Ingredients: 

omelette: eggs, chopped  herbs(chives, oregano, thyme, parsley, rosemary), salt, pepper, a tbsp. of fresh milk  then whisk to combine or use  immersion/hand blender so no  need to chop the herbs.  Place the butter or oil in an omelette pan and wait until the pan gets quite hot  then add the egg mixture... continue cooking until the omelette is set.

salad: cucumber, mint leaves , tomatoes , salt , pepper, olive oil, lemon or red wine  vinegar

serve with some good  bread
